At Ros’e Mari, every pizza is born from passion and craftsmanship, from the careful selection of ingredients of the highest quality. The heart of our pizza is the dough: fragrant, soft, and made with a fine selection of Italian stone-ground flours. A slow, natural leavening — up to 48 hours — releases aromas and flavors that only time and patience can create.

At Ros’e Mari, pizza is an integral part of our story. It’s born from the selection of the finest ingredients, from slow gestures, long fermentation, fire, and the passion and skill of our pizzaiolo.
Each dough begins with the research of organic flours, chosen for their strength (their ability to absorb water and trap gases during rising) and their texture. We allow the dough to mature naturally — up to 48 hours — to ensure lightness and digestibility. Every pizza is unique, created according to the ingredients of the season — one of our signature traits. We use datterino tomatoes grown in our own greenhouses, freshly picked vegetables, Cantabrian anchovies, high-quality capers, and freshly cut aromatic herbs from our gardens.
Tomatoes, in particular, are at the heart of our philosophy: they’re never refrigerated — picked, sliced, and served fresh. Each pizza follows the seasonality of our fields and the products of Agricola Rosmarino.
There’s no recipe that stays the same forever, but one philosophy never changes: sustainability, respect for our guests, and love for raw ingredients.
Among our most loved pizzas is the Roseto — simple, fragrant, flavorful. It represents us perfectly, because it embodies our idea of cuisine: few ingredients, but perfect ones.
