The values of sharing and hospitality are the legacy of my farming roots. I love surrounding myself with people—just like with plants—because both give back positive energy, balance, and serenity. When you’re immersed in greenery, in touch with nature, everything feels more authentic.
It’s impossible to resist this call. When you sit in our gardens, even alone and in silence, you’re enveloped by those sounds too often buried under the noise of the city and modern life. The rustle of leaves, the whisper of the wind, the song of birds. You’re carried by the fragrance of flowers or the scent of rain-kissed earth. You are happy—and you know it.
Since childhood I’ve breathed this vibrant air that gives back energy, and I still do. I know others feel it too, and that confirms I’m in the right place, doing the right thing. My dream is for our estate to become an open park, where anyone can lose themselves in the green and rediscover themselves in nature’s breath.

Gian Michele Pilo is the technical and creative heart of Ros’e Mari. Co-founder and the project’s quiet soul, he gave tangible form to a dream born from the desire to bring a forgotten place back to life. With deep respect for materials and for the history of the greenhouses, he oversaw every architectural detail, favoring reuse and recycling, transforming what was abandoned into a harmonious, functional space. He’s the practical mind and problem-solver, the one who balances vision and reality. Meticulous with logistics and technical planning, he knows every aspect of the estate—from space capacity to energy management—and safeguards its efficiency with care and dedication.
Gian Michele is a steady, reassuring presence: he welcomes guests with kindness, looks after their needs, and naturally conveys that sense of genuine hospitality that defines Ros’e Mari.

A story of renaissance
“Ros’e Mari was born with the heart, not with the head,” says Lucia Schirru, the hostess—the soul and heart of Ros’e Mari. “It is the result of an act of love toward a forgotten place, an attempt to return dignity, light, and a voice to it. A place of the heart—especially for Gian Michele, who spent his teenage years here among the greenhouses, the scents, and the work of the fields.”
Once, these greenhouses were filled only with silence. The decaying structures stood as mute witnesses to a once-thriving nursery. The frames were corroded; the panes still intact were etched with patterns drawn by dust and rain, letting in an uncertain light. Neglected plants had broken free of their terracotta prisons, covering walls and collapsed roofs with a green mantle. Nature had reclaimed the space, imposing its wild, pervasive presence.
When Lucia Schirru and Gian Michele Pilo took over the property, they didn’t see an ending in those ruins, but a beginning. With affection and determination they chose to return life, light, and identity to those forgotten structures. It took years of work, patience, and care to clear the land, dispose of debris, and let a place that seemed lost breathe again.
This is how Agricola Rosmarino was born—a new root planted in a land long acquainted with work and beauty. Among datterino tomatoes (Lucia’s red passion) and the aromatic herbs that now perfume the restaurant’s cuisine, the bond with the earth began to bloom again.
The garden that embraces Ros’e Mari today is a family story: plants brought from the homes of mothers, aunts, friends, and neighbors. With Marco Pessini, son of the nursery’s original founders, a Mediterranean garden was rebuilt that respects the pattern of the old greenhouses, blending roses, wisteria, star jasmine, and ornamental grasses. Every plant has a story; every flower, a memory.
In 2018, for her 60th birthday, Lucia chose to celebrate here, among greenery and loved ones. She felt the place radiated something rare: peace, harmony, well-being. From that day she knew the space had to be shared. Two years later, Ros’e Mari opened as a restaurant, and then as a boutique hotel, becoming a refuge of beauty and freedom, a symbol of welcome and togetherness.
Ros’e Mari was born from an intuition and a leap of faith, but above all from an authentic love for the land, and for life’s power to renew itself. Every greenhouse, every glass column, every corner of the garden has been enhanced with great care, without losing the romantic charm that is Ros’e Mari’s signature: reused windows and frames, wild plants integrated into pathways, reclaimed materials transformed into furnishings. Here, the boundaries between inside and out soften—so that nature remains the protagonist.
Today, Ros’e Mari fully reflects the values of Lucia Schirru and Gian Michele Pilo, whose vision and determination are its driving force. But nothing would be possible without the commitment and skill of our collaborators, who bring passion and dedication to the project every day.
Davide Schirru, Lucia’s nephew and a great wine enthusiast, plays a key role in hospitality and events, bringing enthusiasm, sensitivity, and attention to every detail of the guest experience. Loredana Schirru, Lucia’s sister, has given pastry its own voice: a unique, recognizable style—technical mastery and refined creativity that turn every dessert into a small masterpiece of taste and elegance.

The hidden art of hospitality
Davide Schirru, Ros’e Mari Manager
Davide knows every soul of Ros’e Mari: the garden, the grounds, the kitchen, the people. His day starts early—at local markets in search of the finest ingredients, or in our greenhouses checking on the datterino tomatoes, the pride of our kitchen garden. For him, shopping is already hospitality. Quality starts here: knowing how to choose, compare, and sometimes—out of respect for the guest—knowing when to say no.
Born into a family of farmers, Davide began his journey in the agricultural side of the business, a child of a hands-on culture. Following his mother’s advice—“those who can’t do, can’t lead”—he now guides with balance and firmness, while keeping the curious, sensitive gaze of someone who understands people’s unspoken needs.
In constant dialogue with chef Maurizio Falchi, Davide selects every ingredient with rigor, honoring a pact of trust with our guests: offer the best on the market at the right price. Every dish carries his quiet, behind-the-scenes work, far from any desire to be center stage.
But Davide is not only in charge of procurement. He coordinates staff, oversees events, and fine-tunes every detail of the Ros’e Mari experience, from weddings to business meetings. Together with Giulia, he manages the commercial and organizational side, crafting every event to measure—with care, dedication, and passion.
His love for wine reveals another facet: the Ros’e Mari cellar is the result of his personal curation, bringing together Sardinian, Italian, and international labels. Davide chooses wines with the same attention he gives to the kitchen’s ingredients—because every bottle should tell a story, just as every dish tells its own. And as he likes to say: “Ros’e Mari isn’t exclusive—it’s open. You can come in straight from the sea in flip-flops, or arrive in evening wear to celebrate something special. Here, everyone finds the right place, the favorite dish, and the perfect wine.”
Between directing the restaurant, running the dining room, and supervising the farm, Davide keeps the philosophy of the place alive: authenticity, care, and a sense of community. Because, in the end, being part of Ros’e Mari means just that—sharing the joy of life.


The joy of meeting

Giulia is the friendly face who welcomes you upon your arrival at Ros’e Mari. Together with Davide, she personally oversees all meetings and events, carefully managing weddings, private parties, birthdays, baptisms, and confirmations.
With each client, she arranges a preliminary meeting to fully understand their needs and create a completely tailor-made event. Giulia and Davide are committed to fulfilling every request — from the food, including any special dietary requirements, to the decorations and setups — taking care of every detail with passion and attention.
Every moment is attentively followed, from guests’ arrival to the conclusion of the event. For meetings, the spaces can be rented even on days when the restaurant is closed: the rooms are always available upon request.
Giulia and Davide organize intimate meetings for around ten people, with a private room and dedicated lunch, as well as large-scale events for up to 200 participants, complete with theater-style seating, stage, and LED wall. Standard packages are available, but in most cases, everything is customized according to each client’s preferences and needs.
As for weddings, special attention is paid to every detail. Each event is designed to reflect the elegance and philosophy of Ros’e Mari: everything is served in ceramic or glass, avoiding the use of plastic. This principle is deeply rooted in the venue’s history. Since 2019, when Ros’e Mari was still a farm, Lucia and Davide were recognized as the first in Italy to package datterino tomatoes in completely plastic-free containers made from corn fiber. That pioneering choice still represents the soul and values of Ros’e Mari today.
Even at weddings, the beauty of the table and the decorations is born from attention to detail. Individual portions are served in ceramic or glass, with custom place cards and allergen information. The utmost care is given to special dietary requirements: separate buffets are available for vegan guests and personalized menus for those with allergies or intolerances.
In general, every single aspect is handled with care — attention, sustainability, and beauty in every detail.
